Chicken Salad - Serves 2
Ingredients:
125ml (1/2 cup) chopped, cooked chicken (skin removed) 125ml (1/2 cup) grated raw carrot 7,5ml (1 1/2 tsp) finely chopped onion 1/2 unpeeled Granny Smith apple, cored and chopped 1 celery stalk, chopped 2,5ml (1/2 tsp) French mustard 30ml (2 tbsp) low-oil mayonnaise lettuce 5ml (1 tsp) chopped parsley Method:
# Combine the chicken carrot, onion, apple and celery in a bowl. # Mix the mustard with the low-oil mayonnaise, add to the ingredients in the bowl, and toss lightly together. # Add a little salt to taste. # Arrange the salad on lettuce leaves and sprinkle with parsley.
